Snapper Frame Fish Cakes

Here’s a nice quick, yum recipe to utilise your snapper frames.
Brilliant while they are fresh, straight after a fishing trip. The best juiciest part of the fish.
Here, I’ve used 3 pannie snapper frames including head and wings, plus half a kingfish backbone.
1. Break the frames down, separating wings, head, and split the knuckles of backbone.
2. Mix a marinade of;
3. Olive oil
4. Siracha
5. Sesame oil
6. Habenero Mustard
7. Cajun
8. Cumin powder
9. Coat fish pieces
10. Roast on tray of Manuka (could use rosemary, thyme etc) for 15 mins at 150c
11. Mash two Kumara (sweet potato)
12. Add chopped celery, red onion, thyme, parsley
13. Let fish cool, Seperate meat from bones. (Save bones for a fish stock later)
14. Add fish meat to Kumara and vege mix
15. Form into Pattie’s and coat in a mix of sesame seed, panko & Cajun.
16. Shallow fry until brown in butter and serve w a wasabi slaw.
