Hiakai - Modern Māori Cuisine

Every once in a while a cook book comes along that blows my mind, and Hiakai is one of those books!

Chef Monique Fiso has been taking NZ cusine to another level, after returning home from working in some of the world’s top restaurants and now integrating traditional Māori ingredients in her fine dining restaurant Hiakai.

Hiakai is an exploration into Ngā Atua - the food of the gods. It is an exploration into all of the nourishing soul food ingredients we have on this whenua, and that Tangaroa provides.

A lot of the recipes are intricate and next level, but the book is more than that, it is a huge resource into the many under-utilised plants and ingredients at our finger tips. This is kai that will feed the wairua - the spirit, and nourish the tinana - the body. As such it is a Taonga that should be on any keen NZ cooks bookshelf.
