Mock Whitebait (kingfish) Fritters Recipe - w a side of Kingfish sashimi!

Here’s a banging Paleo style recipe idea for you, especially if we send you home with some fresh kingfish after being on one of our Men’s Retreats or fishing trips!

If you love whitebait fritters, you might be suprised just how close this comes, and with a side of fresh sashimi, it might just surpass the original!

This recipe is so easy to make, and using only fresh organic ingredients, it so bloody good for you!

You can feel the mauri - the life force, and in these photos you can see I used a really healthy, fat fish, the fat content was off the chart!

To begin with you will need:

-A slab of kingfish, skin off

-6 free range eggs (adjust quantities to suit)

-One spring onion

-Half a red onion

-Watercress or suitable green herbs

-Organic tamari (I uses Ceres), this is a paleo alternative to soy sauce, and tastier!

-Organic sesame oil

-Wasabi paste

-Lime juice

STEPS - MAKING YOUR MOCK WHITEBAIT (KINGFISH) FRITTER W SIDE OF SASHIMI

  1. Chop your garnish

2. Cut your kingfish pieces for the fritters. The idea is to make them small, thin and rectangle. Whitebait size or a touch bigger, like anchovy size. If I am trimming up a perfect block to cut sashimi off, this is the perfect accompaniment to my sashimi using the offcuts.

3. Keep going…

4. You want a pile slightly bigger than the egg mix you are going to pour in and mix together

5. This gives you an idea of proportions, egg mix versus kingfish. Now mix together

6. Using a large serving spoon, spoon mix into hot cast iron pan w melted butter (keto) or coconut oil (paleo)

7. Crack some pepper into mix (these are your whitebait eyes!) Fry until golden

8. While cooking your batches of fritters, prep you sashimi

9. Serve with garnish

10. Just before eating, pour over drizzle mix of lime, wasabi, sesame oil, tamari

BOOM!! ENJOY!!!
