Ketogenic Scallop Recipe w cauliflower spinach cream butter garlic
My favourite seafood would be raw scallops. Straight out of the ocean, or even better, back on land slightly chilled down.
When I am cooking them I like to make the most of that rich creamy tasty you get when they are cooked. It is quite a contrast to having the raw.
Here’s a little cracker of a recipe I’ve been trying lately, and we used it on our last Men’s Wellbeing Retreat, everyone loved it, so thought I would share here:
1. Shuck freshly hand picked diver caught Coromandel scallops
2. Warm up empty clean cupped shell
3. Add olive oil diced garlic and butter
4. Add finely chopped cauliflower
5. Add spinach parsley fresh oregano fresh thyme
6. Add Parmesan cheese and cream
7. Once mixture thickens add scallop
8. Pop roe with fork
9. Turn scallop once
10. Once scallops turns opaque take off the BBQ and serve w squeeze of lemon ENJOY w a kombucha!
The great thing about this scallop recipe is it is pretty much a meal in a shell with so many different nutrients. A serving of scallops gives you 110% of your RDI of Cobalamin (Vitamin B12), essential for your red blood cells and Magnesium, both key vitamins for the nervous system , good mental health an overall immunity.
