Paleo Bluenose Recipe w Nutritional Info
This bluenose meal last night got me thinking. Food is everything.
Whether it is eating, growing, collecting, foraging, cooking, preparing, hunting & even buying. It is one of the fundamental things we do every day that connects us to other humans, to nature & to our source of creation.
This meal was largely gathered from the ocean (while soaking up some sunlight and fresh salty air) & garden at home, with a few other ingredients I can’t grow or gather myself right now thoughtfully purchased - then cooked with love for the 4 loved ones in my whare last night.
Once you start looking at what goodness is in behind each ingredient, you start to realise….we don’t need too much more… The result of each of these Vitamins, Minerals, Phytochemicals, Proteins and Fats is a regulated immune system, cardiovascular health, blood pressure. diabetes control and blood sugar management, better cognition, neurological health & mental wellbeing, anti cancer properties/antioxidants, skin benefits, kidney health, anti inflammatory, joint health, gut health, bone health, eyesight, anti ageing, and more….
This recipe follows a Paleo approach, so its good for you - but still jam packed full of flavour, and…..quick and easy!!!
CAULIFLOWER PUREE
Roast the cauliflower at 150 for about 20 minutes, then puree in a Nutri bullet with cocount cream
Roasted Cauliflower -VitC, Vitamin K, Vitamin B6, Folate *B9 Calcium, Magnesium, Potassium
Coconut Cream - high in good fat, Minerals - Iron, Selenium, Calcium, Manganese, Phosphorous, Vitamins VitC, VitE, VB 1,3,5,6,
SPICED BLUENOSE
Roll medallions of bluenose in a spice mix eg Tumeric, Cumin, Smoked Paprika, Garlic powder - even a premade cajun mix will do.
Bluenose: good protein, good fat / Omega 3, Selenium, Vit B12, Iodine, Phosphorus, Potassium, Niacin (vit B3).
Turmeric - high in curcumin
Cumin - Thiamin, VitA, Niacin, Iron
Smoked Paprika - Vita, VitB6, Carotenoids
Garlic - Vit B, Vit C, Allicin
SALSA VERDE
Whizz up the following goodness:
Rocket & Silverbeet/Spinach: Manganese, Magnesium, Iron, Copper, Potassium, Vitamin K, Vit A, Vit B9.
Mint, Thyme, Basil: Flavanoids, Thymol, P-cycmene, VitC, Diterepenes, VitA
Pine Nuts: Pinolenic acid. Good fat and protein. High in vit E, vit K, copper, iron, manganese
Sunflower seeds: high in vit E, selenium
Apple Cider Vinegar: helps regulate blood sugar, gut health
Capers: calcium, magnesium, fiber, vit C
Gherhkins(Cucumber): Vit K, flavenoids
Olive Oil - good source of mon unsaturated fat
SALAD
Watercress , Tomato (lycopene), Cucumber, Capsicum, Olive Oil (more goodness as above!)
